The humble spud

Tired of boiling, baking, mashing frying potatoes? Try this mouthwatering Indian dry potato curry instead,

ALOO MATTER

Cubed potoato

Peas

Chopped coriander

Coriander powder

Turmeric

Chilli Powder

Garlic powder

Fring oil

Cube potaotes and chop coriander lightly

Add coriander leaves to hot oil and cokktill crispy on edges, add potato and cook for 7 mins, stirring once.

Add your dry spices and peas, give pan a shake and cover with lid and cook till potatoes ready, approx 8 mins,

Add salt and pepper and more chili if you like it hot, serve with fresh coriander sprinkled on top.

MY TOP TIP

I like to add yellow or black mustard seeds to add a bit of bite at the beginning along with the cripy coriander. Enjoy šŸ™‚
