Half fill a pan with water, once boiled turn down and place a bowl over water, make sure water is not touching bowl and that no water at all is in the bowl. Place the finest quality chocolate that you can afford and leave it until its lost its shape. Stir gently until a glossy liquid, then pour it into a piping bag, havnt got a piping bag? No problem, I use a zip lock bag sometimes and just snip off the end.

Pipe desired shapes onto grease proof paper then pop into freezer to set.
