Love rostis, but think theyre to hard to make? Heres a fail proof recipe just for you!
Grate potato into a bowl, sprinkle liberally with salt, this draws out the excess water. Squeeze out excess water after about 5 minutes.
Add sauteed red onions, salt, pepper and fresh thyme and mix together.
Now you will have to work quickly! Pop a metal mould into hot oil, spoon in mix and tamp down flat, pull up mould immediately so cooking potato wont stick to it.
Repeat in batches of 3, turning once, when golden. Drain on greaseproof paper.
Serve and enjoy! These can be reheated in oven if your preparing them in advance for a dinner party 🙂
